After many years of camping ourselves watching our Purecamping guests in action cooking up a storm for their friends and families, we have come up with 5 easy, delicious and practical meals that you can prepare while camping. If you have other ideas, please share and we’ll add them here. Warning…. it is meat free and that’s because we are vegetarians. We don’t object to people eating meat, it’s the mass production of meat and the negative impact that it has on our planet. So, if you do eat meat, just make sure that you know where it comes from and that you are happy with that.

1) Hearty veggie soup

Everyone loves a veggie soup. Grab whatever veggies you can get in the local market. Sautés leeks or onions, diced potatoes, carrots, celery and if you have a few lentils in tupperware, give them a rinse and throw a handful of them. Add water and some stock seasoning and off you go. You’re nearly there…. Add some crusty bread (Considine’s is our local bakery in Kilrush) and you have a ready made healthy meal.

2) Chilli Sin Carne

Nothing like a chilli to warm your heart. Tinned beans are a very handy camping food to have. Sautés your veggies, whatever are in season and available (onions or leeks, carrots, parsnips, cauliflower), add some chilli powder and a taste of ground cumin. Add 1 or 2 tins of tomatoes and little bit of veggie stock. When the veggies are almost cooked, add the tinned beans, kidney beans work well but use whatever you have. Serve with a dash of natural yoghurt and some grated cheese. You could add brown or white rice or serve with Torillas. If you are feeling fancy, whip up some guacamole (avocados, limes, chilli).

3) Veggie BBQ with kebabs

Veggie BBQs can be dull sometimes, but they don’t have to be. Courgettes, onions, peppers, sweet potato, garlic work really well and can be skewered to make up a kebab. Parboiled potatoes, sliced and place on the grill with a bit of oil are another delicious addition. Haloummi works really well on a grill as do veggie sausages or burgers. Add a green salad and you are sorted!

4) Cous cous salads

No cooking required. Soak some cous-cous(plain, wholemeal or giant) in a little stock. Chop up tomatoes, spring onions, peppers, really finely and mix in to the cous cons when it is puffed up. Add a handful of parsley or coriander. If you are a nutty person, add some chopped nuts or seeds.

5) Frittata

If you can get your hands on some Free range local eggs, then a frittata is another simple one pan meal. Gather up your veggies, sautés them off add some seasoning. Whip up your eggs with a bit of Yoghurt or Milk and pour on top of the veggies. You could add some fresh spinach as its cooking.
